Time to breathe

Things are just going, going, going around here! I’m not sure when it will stop, either. We had Art in the Square on Saturday, so all last week was spent making and cutting cheesecakes, making sure we have all that we need to sell them. Adam and his brother also sold chicken tenders and home fries, so the chicken also had to be battered. Some how, in the midst of all the things happening last week, I got 3 dresses sewn for the girls. I’m still not sure how that happened!

This morning was spent doing school, cleaning up the kitchen from us just dumping everything in there Saturday night, cleaning out 13 hotel pans that we need for this week, and washing off the batter from chicken that was left over. I finally sat down to eat my lunch at 2:30 pm while dictating supervising children cleaning the complete mess that was made while I was in the kitchen working.

This week doesn’t look much calmer. We have a function for supper tomorrow of 40 ppl. They want a double order of ribs, grilled chicken, rosemary roasted red potatoes, wild rice pilaf, glazed carrots, along with the standard items that come with our buffet: mixed green salad, rolls, fresh fruit, coffee, and tea. On Saturday, we have a wedding of 300 ppl that’s about 15 minutes away. On that menu is Chicken En Croute (which is like a beef wellington, only with chicken), baked ham, rosemary roasted red potatoes, ans glazed carrots (we actually have much more than rosemary roasted red potatoes and glazed carrots on our menu! It just happened that these two  want those two items.), along with our standard items. They also have ordered a sausage and cheese tray for 100 ppl and bacon wrapped water chestnuts for 100 ppl to be served when the band starts.

After this weekend, we don’t have anything on the calendar. For the moment. But that can quickly and easily change. This doesn’t include the every day stuff: like school for 3 different grades/ages, laundry, cleaning, feeding,… you know, the every-day stuff that every other mother does too.

By the way, we got the contract for the Meals on Wheels program here in Forest County. That means that from Jan. 1,2011 to Dec. 31, 2011, we will be the catering business that makes all the food. Adam’s last day at work will be Dec. 16 and I am so excited! We have prayed for a home based business for so long, it’s almost surreal that it’s happening! Of course, when the time comes for him to be completely done at his current job, I’m sure it’s going to be even more so!

We are on our 4th week of school and I’m scheduling things much different this year (so far). In the next few weeks, I’m hoping to get the time to talk about it. But for now, this will have to do.
